“Un rhum blanc dans la pure tradition agricole, comme Bologne sait bien les faire. Le nez est un savant mélange entre la verdure des champs de canne à sucre, le fruité acidulé sur le zeste de citron, le côté épicé sur le poivre et les notes minérales. On a un profil d’une belle rondeur et assez expressif. L’attaque en bouche fait preuve d’audace, se gorgeant d’épices (anis, clou de girofle) pour intensifier le profil. Les notes végétales et les agrumes soutiennent la tonalité assumée de ce Bologne assez sec. La texture en bouche se veut épaisse, légèrement crémeuse, ce qui est plutôt agréable. L’alcool est bien intégrée mais on ressent que ce profil est plus aiguisé que les blancs conventionnels. La finale est très longue, portée par les épices (piment notamment) qui apportent leur chaleur tandis que les notes herbacées équilibrent le rapport de force. Fruits exotiques et canne à sucre se partagent la fin de bouche. Un Bologne élaboré, parfait pour des Ti Punch relevés.”

“In der Nase erstmal recht schüchtern, zwar individuell aber nicht komplett einzigartig, am Gaumen entfaltet sich dann doch sehr viel ungeahntes. Neben den floralen noten ein wenig Süße und Zitrus, hat was Tequilesques. Im Abgang verschwindet die Süße und wird trocken. Sehr schöne Folge beim Trinken.”
