“Le nez est très élégant sur la vanille, le cuir, les épices (cumin …) et bien évidemment les esters de longues fermentations. En bouche, c’est équilibré et dosé à la perfection. Un dosage tout en finesse d’épices, de fruits sur mûris et de fraicheur mentholée. L’olive, du bois humide (tient tiens est-ce le chai humide qui donne cette sensation) et du miel rendent ce millésime excellent ! La finale est gourmande et longue voir interminable sur la réglisse et la cerise acide.”
