"This Saint James at ABV 60% made from cane juice is not distilled in an column still as most of their produced rum, instead it’s double distilled in copper pot stills. So because of that it’s an Agricole without being an AOC rum. It makes a good Ti Punch."

Need to rest for a good while to settle and release all its flavours."

Was initially too violent for me, esp. the earthy aromas that made me think the sugar cane roots to chew - an impression that has become much weaker over three quarters of a year. Alcohol is well integrated, but 60% brings a certain sharpness. In the meantime I appreciate it, especially in Ti Punch with only a little lime it develops a deep red berryiness. The is also my secret ingredient in the Mai Tai."
