It was distilled in 2000 from Molasses with a Pot Still and then aged for 17 years. The rum has an ABV of 51,6%. A good rum, but a somewhat atypical Long Pond. It lacks the fruit basket almost completely. For this it has a slight TECA-like meat note, but overall very rounded by the Ferrand cask finish.
Quite the umami flavor. Absolutely no fresh fruit anywhere. Intriguing and certainly not bad, but maybe as an experiment not what I want. Still an interesting flavour and I have no clue where that meaty umami comes from
