Une dégustation chez mon caviste qui fait plaisir 👍 👃 Très intense, sur les épices, sel, poivre, salaisons de viandes séchées. C'est mielleux, bonbon au miel, puis léger foin sec, caramel très doux, chocolat noir et son café corsé mais peu amère, crème caramel finalement, de la douceur. La saumure s'invite, l'olive est bien là, légère fermentation lactique, esters bien présents derrière le vieillissement de 12 ans en fût de Pedro Ximenez. Fruits très secs sous forme de pâte (cassis, figues) puis de la banane flambée au rhum, type banane plantain. Un peu d'ananas confit fait son apparition et repart. Un nez qui a encore beaucoup de choses à dévoiler. 😋 On reprend les mêmes, saumure, olive, salaison toujours, sauce soja salé. Évolue vers la réglisse, caramel, miel de bruyère, gousse de vanille séchée, café serré, grain de café torréfié, chocolat noir. Les fruits sont fermentés (banane, figues, baies noires, fraise ?). Bouche évolutive et complexe. ⛳ Touche de menthe, réglisse, fruits trop mûrs mais si bons, miel de sapin avec du sel. Les esters au service du rancio PX. Excellent, atypique, expérience réussie 👌 Voilà ce que j'attends d'un rhum Michel Couvreur ; la typicité du vieillissement continental en chai humide cher à MC avec un distillat suffisamment fougueux à la sortie de l'alambic pour ne pas être "trop" écrasé par le Pedro Ximenez. 💡 À ce stade je penche pour un distillat high ester de chez Hampden, peut-être un mark <>H.
