I have to say that I somehow like these Vieux Sajous better and better from year to year; the first ones were a little wild, but this one is a little rounder. I'd like to leave it in the barrel for a few more years.
Sajous is getting older and seems to improve with age. The nose makes a good impression, striking a balance between the fresh, vegetal side (olive, herbs, sugar cane), the fruit (berries, citrus), the spicy, woody nuances and the more empyreumatic, medicinal accents. The whole is pleasant, well-structured and harmonious. The balance of the nose is mirrored on the palate. Behind this elegant, diversified profile lie more assertive empyreumatic flavors (meat, smoke, tar), herbaceous notes and mouthwatering sugarcane juice, but also spices and medicinal nuances. Banana joins berries and citrus, offering a multitude of flavors to deconstruct. The profile seems to have gained in complexity and amplitude compared to previous bottlings. The alcohol is very well integrated. The finish brings no real change, with a vegetal, medicinal, smoky, meaty and fruity aggregate that lingers for a long time on the palate. A skilfully crafted old clairin that impresses. Very good value for money.
A battle? No, a marriage of typical Clairin notes (especially Sajous). Full-bodied, medicinal, yet fruity, with more gourmand notes of vanilla & caramel. A rum that seems to be enjoyed with disconcerting ease, and renewed pleasure! Lacks a bit of punch to create a wow effect, it's almost "too simple".
Schöner und frischer Rum: Honigmelone, gelbe Früchte, bisschen Kräuter, Zuckerrohr. Insgesamt sehr gefällig und der Alkohol ist gut eingebunden. Mittellanger Abgang. Wirklich gut gelungene Abfüllung!!
