It was distilled in 2020 from Sugar cane honey with a Pot Still and then aged for 5 years. The rum is bottled at cask strength and has an ABV of 59,5%. A battle? No, a marriage of typical Clairin notes (especially Sajous). Full-bodied, medicinal, yet fruity, with more gourmand notes of vanilla & caramel. A rum that seems to be enjoyed with disconcerting ease, and renewed pleasure! Lacks a bit of punch to create a wow effect, it's almost "too simple".
Whisky Live Paris 2025 - to be tasted again to confirm the score and notes. This aged Sajous keeps surprising me year after year. The profile, a distincitve one, is pretty much the same of the previous releases, making this a good dram. Sugarcane is there along with some honey and vanilla sweetness, plus some herbal notes and a slight influence from the cask.
