Sherry adds some flavour here but this has been sweetened--the menu even says so when you get a flight. Cheers for being upfront about it--I've got no issue with sweetening if it's clear. Reminds me a bit of the Dos Maderas 5+5 I just had, which is also sherry barrel aged and sweetened (though the latter isn't declared). Light golden pour. Some potpourri. Smooth finish, but sugar will do that for you--or in this case molasses.
