He's done it! The nose promises an exceptional experience, between exotic fruits, esters, and in the background smoky notes, a touch of bacon, plantain chips. The palate follows, sweet at first, slightly astringent, drying the palate as if aged, then the fruit slap returns in full force. The texture is fatty, almost milky, with hints of ferment. It's really top-notch! Well done!
Never really found my way into Le Galion. Here too: Quite exciting on the nose with esters and lots of fruit, then comes the taste of sour strawberry yoghurt and children's feet on the palate. For those who like it...
A very wild number, but typical le Galion. Overripe, fermented strawberry, pineapple (pineberries), butterscotch and baked apple as well as bacon and olive brine. Fruit yoghurt with salty brine, passion fruit and allspice. Slightly astringent and tart. Well made but you have to be in the mood for it!
I just really like this Galion profile! It's almost a cross between a High Ester Jamaican and a Sport Mourant. Young PM with olive, salt, meat meets High Ester Jamaican with peach, ester, marzipan.
