First tasting in a decent bit, and wow! There is a lot going on here from beginning to end. While I've not yet got a handle on it all, this rum is a wonderfully fun journey. The nose evolved over the entire period, starting out with lots of baking spices and barrel notes but eventually becoming creamy and chocolatey underneath. The rum itself was another animal, opening up with an astringent bite like lime pith and then mellowing out into a peppery spice. Mouthfeel was oily, coating the entire mouth. And then the finish, lasting a long while with the earthy and brine notes. Excited for the next taste, and to try it in a Rum Old Fashioned!
