Clairin closer to Sajous in fact has more perfumed notes and is probably the most delicate of all the clairins I have owned.Not surprisingly, the Casimir aged gave excellent results.On the finish there is a slight peatiness mixed with medicinal after a while.Way to go Velier!
The nose is a bit too sugar cane heavy for my preference, but I really like the taste, especially the salty minty finish. Is something different.
Lemon and minue make a delicious marinade for the bacon in the finish.
A wonderfully pleasant, fresh and herbal clairin! Perfect neat and for mixing, the Ti Punch and Daiquiri are 1a.
