It was distilled from Sugar cane juice with a Column Still and then aged for 2 years 5mo. The rum is bottled at cask strength and has an ABV of 61,4%. Nez sur l’eau de vie, la mirabelle, le bois jeune, et une pincée d’épices. Bouche très marquée par le vin jaune, une belle sucrosité, c’est très gras. L’oloroso est présent également, des notes de prunes, de cannelle. Pas mal du tout cette affaire. Un alcool plus bien intégré, et en finale le retour des fruits jaunes, de la mirabelle, et une pointe de muscade. A mon sens, le plus exubérant des 3, mais aussi celui qui m’a le plus surpris (positivement).
