Tasted at the distillery, then throughout my stay in Puerto Rico. Ron Pepon is the only cane-juice-based rum on the island. This version, aged for 24 months in ex-bourbon barrels, is very pleasant. Mainly vanilla and caramel notes. There's still a hint of fresh cane. It's a beautiful, carefully crafted product. I can't wait to discover the next projects of this small distillery, which is making its way on an island where Bacardi and Don Q reign supreme.
