To Fiji Rum & Co
Youthful, but still interesting. The nose opens with notes of leather, caramel, prunes, and brioche, with a nice touch of pear and a faint hint of grated oxidized apple. I definitely picked up some estery notes too. On the palate, there's a distinct mix of young wood, apple, caramel, and oak, balanced with a light tannic structure that rounds it off. The finish is medium in length, with roasted coffee, caramel, dried fruit, and some bourbon-like woodiness coming through. You can definitely tell this rum is still relatively young, but it compensates for that with its vibrant and well-rounded flavor profile. The almost animalish leather and dried plum notes are a standout, giving it a unique character. It may not have the depth nor smoothness of a longer-aged rum, but it still packs a punch and offers something intriguing for those who enjoy youthful rums with their personality not yet tamed.

On The Rocks: On the nose moderate fruit and with mild floral and oak notes with subtle bourbon spice. There is a subtle sweetness hinting at some complexity. Taste has a moderate spice with a brief alcohol and burn. Opens up with a more complex profile of Burbon notes and spice with a lingering warmth. Finish is long with a lasting spice and warmth. This is quite a complex rum considering the aging. This is an exciting rum that is very unique and enjoyable. Mixed Pepsi Zero: On the nose dusty Pepsi Zero with a mild spice and bourbon notes. Taste is smoother with continued bourbon and spice notes. Finish is short and smooth, and still enjoyable with some complexity.
