An ultra-premium Bolognese featuring all the expertise of its distillery. Produced from the first Canne Noire vintage, this edition illustrates the full potential of its terroir, with a complex, elegant nose of stewed fruit and hints of tart citrus, contrasting with dark notes of spices, nuts and roasted coffee. There's a beautiful harmony between the aromas, which follow one another with delicacy. On the palate, the full range of aromas is present, with warm spices, noble wood, toasty notes and dried, tropical fruits. Despite a higher alcohol content than most Bolognes, the attack is suave and refined, demonstrating the excellent integration of the alcohol. A deep profile with multiple facets on the palate. The finish is very long, dry and exhilarating, carried by warm, lively spices and chili pepper. The rum's darker side comes through more blatantly with toasted wood, burnt sugar, nuts and rather heavy pastry notes. All in all, a very good rum that has all the assets to please, but whose price and "pretty decanter" syndrome will, alas, chill all brave enthusiasts.
