Contrairement à son homologue brut de fût, cet Isautier mise sur l’équilibre et l’accessibilité. Le nez est doux, sur le caramel, la cire d’abeille, les fruits confits et tropicaux, l’orange et les fruits secs. Les épices (muscade, vanille, poivre) et le boisé viennent dans un second temps, accompagnés d’une brise florale. En bouche, une aura végétale vient d’abord s’immiscer avant de laisser la canne à sucre et les fruits prendre la relève. On retrouve globalement les mêmes saveurs fruitées et les épices précédemment évoquées. L’alcool est pour le coup mieux intégré que dans la version brut de fût. La finale est très longue, d’abord axée sur les fruits secs et les agrumes (orange) avant de laisser place à une tonalité plus tannique et sèche : les notes pimentées et agricoles sur les herbes aromatiques viennent changer radicalement la face du rhum en fin de bouche. Un profil plus maîtrisé que le brut de fût, tout en gardant une belle expression.
Gouté rapidement au Live donc pas des conditions super, mais j'ai trouvé ça pas foufou. Bon mais ça s'arrête la, comme mes notes d'ailleurs donc je ne pourrai pas vous en dire plus malheureusement 😅.
First nose with caramel and honey, just like a traditional rum, although this is an agricole. Same on the palate with grassy notes in the end where the typical agricole taste shines through, but very good embedded. Second sip after 10 minutes is more grassy like a classic agricole, but still very smooth and easy drinking. A little bit like a crossover, but with best of two worlds. Really great one!
