It was distilled in 2022 from Sugar cane juice with a Creole Column and then aged for 10mo. The rum has an ABV of 54,7%. 8,6:On the nose, the first impression we get is hay, rubber, mustiness, some smoke, the sugar cane is juicy, mineral and fresh. It is fruity with dried fruits like figs, currants, prunes, raisins and some tropical fruits. Aeration brings out spicy wood, some nuts like walnut, overripe banana. 8,5:On the palate, the attack is fruity, a bit sweet, spicy with black pepper and mineral, as the sugar cane is melted, juicy, syrupy and a bit fibrous. There are some vegetal notes like hay, woodiness and nuts, like on the nose.Quickly it becomes dry. There are dried fruits like dried figs, raisins, currants, citrus like kumquat, lime come later.On the mid-palate it tastes like grappa. This is very tasty agricole with brine and olive. 8,4:The finish is long, vegetal with hay, olive, fruity with dried fruits mentioned above, the cane is mineral, waxy and musty, there is wood, a bit dry and again some nuts.
On the nose: Fresh,sweet vegetal canejuice. Hints of dried fruits. Round and balanced. Taste: Fresh hay, grassy and sweet. Black pepper. Mineral, herbal mouthfeel. Then it dries out. The alcohol is integrated very well. Cask influence is there in the body . Finish: Long finish. Vegetal,sweet, little bit of olive. Dry and woody in the end This rum has good amount of depth and complexity playing in the agricole rum flavour world.
