White Cat is a 28-year-old rum hailing from Guyana's Diamond distillery, selected by Precious Liquors. Distilled from molasses via pot still in 1996, this rum offers an aromatically rich profile of apple, coconut, and tropical fruit. Trade fair evaluation. I really like it. Very round/accessible profile with spices, caramel, coconut, tropical and dried fruits and caramel. Alcohol is very well integrated. Pleasant sweetness.
Unusually Spanish in appearance and rather sweetly pleasing.
Not really very complex. I wouldn't have blindly guessed Guyana. It's more of a Spanish column style.
Nice on the nose, but for me it lacks intensity of mouthfeel and depth of flavours. Still quite nice rum that I would not refuse when offered to me next time.
