First of all: make pinewood a tasting note! There's lots of it in the nose. Okay let's see. A 40 year old moscatel cask. Probably full of moscatel drab. Nice. Very noticable. It sort of dampens the funk, but to a nice effect. It's unique. Again the pinewood in taste. Conifere bushes. Red fruits, thick tannic wood/madeira/port and yes moscatel. Heavy! Spicy! We know Fiji makes a powerful spirit but this cask is winning, although it makes a great rum along the way. You gotta love wood though. All the wood. Not you average Fiji but very interesting with bold flavours.
First try of a Fijian rum. Really tasty rum. It is smooth and quaffable. On the nose there are lots of drier fruits, raisins, cherries, coconuts. On the plate there is an initial gentle sweetness (caramel) which is then well balanced with woody and coffee notes. Great quality rum.
