Surprisingly fruity and spicy nose. On the palate, the ingenious sherry influence comes into its own. A relatively woody bouquet with an interesting spiciness (cinnamon, clove) and intensity. Dry and fruity at the same time. The finish is longer than average and leathery/spicy. The special thing about the unsweetened bottlings from Don Papa is their unmistakable aroma, which cannot be compared with rums from other countries. Around 90 euros is quite acceptable for this rum and the taste experience is worth it anyway.

Une marque en particulier a popularisé le rhum des Philippines auprès des amateurs de rhum du monde entier : Don Papa. En voici un nouvel ambassadeur : le rhum Don Papa Sherry Cask ! Elaboré à partir de mélasse issue de cannes cultivées sur l’île de Négros, il est le fruit d’une expérimentation audacieuse de la marque. Cette cuvée a en effet bénéficié d’un traitement très particulier : après plusieurs années passées en fûts de chêne américain ayant contenu du Bourbon, le rhum a été placé dans des fûts ayant contenu quatre types différents de Xérès : Fino, Palo Cortado, Pedro Ximenez et Cream, pour une finition d'une durée de 18 mois. C'est de cet échange qu'il tire ses délicats arômes fruités dans lesquels on devine, au nez, le raisin, mûr et intense, et en bouche la prune et la figue. Un rhum traditionnel original qui saura vous surprendre et vous charmer, sans nul doute…
Fruity and spicy on the nose with notes of cherry, fig, plum and raisin. A small hint of tobacco and clove. Some acidity in the direction of green apple and tangy Riesling. All in all, mild and full-bodied. In the mouth, unmistakable sherry, cherry, raisin, fig and spicy oak. Also a fine acidity of white wine. Dry. The finish is rather short to medium with a hint of cocoa and some lemon zest. Great rum and not too oversweetened for my taste.
