Bologna calls in the heavy artillery with this raw, single-varietal (black cane) monster. The nose is immediately apparent, with its strong vegetal, earthy, herbaceous and floral overtones. You'd think you were in a sugarcane field. Behind this fresh, wet nose, however, lie citrus fruits and notes of spice and pepper. A slightly tense Bologna that's just waiting to be released. The palate is lively and very spicy. Aniseed pops up alongside lime, sugarcane, chili and earth to remind us that this is a beast that's hard to tame. It feels like the breath of the desert on the palate, with a lovely aromatic intensity. The alcohol, however, is very well integrated. The finish is long and warm. Once again, the spices (chili pepper) wage a merciless battle against the planty, herbaceous aromas to establish their supremacy on the palate, with citrus standing in ambush. Powerful yet well-structured and balanced, this Bologna will be the perfect companion for a Ti Punch from hell.
