A very solid WP! The nose is the more complex area... then a classic appearance! It needs some time in the glass... then it becomes more harmonious!
At release the price was very good for this wonderful bottle. Leave to rest for a while in order to get the full experience from this nice rum. The nose is fresh and fruity with vegetal, wood and vanilla trailed by pepper. The palate is warm, lightly salty and fruity with pepper, roasted wood, vanilla nuts. The peppery note is also present here and it adds some heat to the palate. The finish is long and warm with roasted wood, fruits and vanilla. The flavours get even clearer if the empty glass is rested for an hour or two.
This is the first time I taste a Wild Parrot..well, gotta say that it is indeed very good: nose and palate very coherent, with grilled pineapple, unriped banana, mild spices, wood and some sweetness with burnt caramel and toffee. Finish il long, dry and spicy. The alcohol burn is really strong, it needs some time to open up.
On the nose I had almost only tomato (peel). Association with Pico de Gallo. complex and exciting. Long persistent finish.
