Au nez, c’est plus expressif et plein que le Prélude (ce n’était pas très dur en soit). On retrouve le profil épicé-poivré-vanillé du prélude. Mais c’est plus frais avec du fruité citronné et de la menthe. Cela donne vraiment plus d’envie à la dégustation que le prélude. L’attaque en bouche est douce et équilibrée. On retrouve le poivré du nez, du boisé et des fruits secs. C’est plus gourmand. La finale est moyennement longue sur le poivré. Ce Symphonie est bien meilleur que le Prélude. Mais il n’empêche que nous sommes encore loin d’un vrai bon agricole comme on les aiment.
